Timkat (also known as Timket) is an Orthodox Christian celebration of the Ethiopian Epiphany. It marks the baptism of Jesus Christ in the Jordan River.
Pilgrims come from far and wide to take part in the festival and witness the re-enactment of the baptism. All over the country, large crowds assemble as the religious festivities commence, with spectacular processions, song, dance and prayer.
So if you're in the UK as most of us, we have some great pairings that could bring the Timkat magic to your door.
Zighni is a spicy hot beef stew slowly cooked to blend with the rich combination of spices and chilli.
This is a feast for the senses. The berbere spice mix adds a huge depth of flavour, thanks to its heady combination of aromatic spices such as cinnamon, cumin, cardamom and fenugreek
Tibsi is prepared with lamb cubes sautéed in ghee with onions, rosemary and green chilli. Served with salad on the side
The sauce in this dish gets its kick from berbere, an Ethiopian chili powder fragrant with cardamom, fenugreek, and clove. Use it once and you'll see why a good chunk of Eritrean cuisine is built on it.
Dohro is chicken stew slowly cooked in a rich flavour of herbs, spices and chilli.
Dorho is one of the most famous of all African dishes. You will find it in every Eritrean / Ethiopian restaurant and virtually anyone who is familiar with African cuisine will have heard of it.
Dorho is traditionally made very spicy. Super spicy. Western adaptations are still spicy, but quite tame compared to the real deal.
